Define target dimensions, tolerances and the measurement method, then connect them to an approved sample.

Control colour without vague claims

Describe an acceptable red colour range and discolouration tolerance instead of using terms such as premium red.

Compare samples under the same light and confirm any additive or colour declaration on the product specification and label.

Set the heat target

Pungency varies by chilli variety and lot. Where consistency matters, specify SHU or capsaicin limits and pair them with a practical tasting method.

Do not assume that Ito Togarashi or Sil-gochu always means mild heat.

Measure usable yield

Moisture, broken threads and powder change appearance, handling and portion cost. Define limits and a repeatable sampling method.

Review the product again after transport simulation or normal carton handling when breakage is commercially important.
