What is Shichimi Togarashi?
Shichimi Togarashi is a Japanese seasoning blend commonly translated as Japanese seven spice or seven-flavor chilli pepper. Red chilli normally provides the heat, while other components add citrus, seed, herbal, peppery or seaweed notes.
Nanami Togarashi is another market name used for similar seven-spice blends. For purchasing, names alone are insufficient because formulas and proportions vary among producers.
Which ingredients may be included?
A formula may include chilli pepper, white or black sesame, citrus peel, sansho pepper, seaweed and other seeds or spices. The exact seven ingredients, their order and their proportions depend on the selected recipe.
Buyers should request the complete ingredient statement and avoid copying a generic online recipe into a commercial label. Formula changes can affect aroma, colour, heat, allergens and destination-market compliance.
How does heat and texture vary?
Heat depends on the chilli variety and proportion. A supplied procurement reference presents bands ranging from 100–1,000 SHU to 15,000–20,000 SHU, but the contracted value must be tied to one SKU and test method.
Flake and powder formats create different visual and serving results. Mesh size, fines, colour and free-flowing condition should be reviewed with a representative sample.
How is it used in foodservice?
Shichimi Togarashi is typically used as a finishing seasoning for udon, soba, ramen, rice bowls, soups, grilled meat, fish and vegetables. Kitchens can select a milder aromatic blend or a hotter formula according to the menu.
Test the blend in the intended dish because salt, broth, fat and serving quantity change the perceived heat and aroma.
What should buyers verify?
Approve ingredients, allergens, SHU range, granulation, moisture, colour, unit weight, shelf life and packing against the final specification and label.
Where sesame or another allergen is present, confirm the declaration and any cross-contact statement for the nominated manufacturing site before artwork approval.
