Do not evaluate grade names in isolation
Terms such as Grade A and Grade B are useful commercial references, but the acceptance standard should also define measurable appearance and condition criteria. Buyers should connect the grade to a contract specification and an approved sample.
For the current Longki Foods offer, Grade A and Grade B whole dried shiitake mushrooms are listed with a 4–6 cm (40–60 mm) cap diameter. Other details remain subject to the approved specification.
Confirm cap size and whole-cap appearance
Cap diameter affects retail presentation, portioning and intended foodservice use. A purchasing brief should state the accepted diameter range and explain how out-of-range pieces will be handled.
Appearance criteria may include cap shape, thickness, colour and surface condition. These should be judged against agreed references rather than a promotional photograph alone.
Define stem trimming and broken tolerance
Stem length and trimming requirements can affect usable yield and preparation labour. The acceptable stem specification should therefore be confirmed before the sample is approved.
Broken tolerance should state what counts as a whole cap, broken cap or piece and how the percentage is assessed. The applicable tolerance depends on grade, contract specification and approved sample.
Match form to the buyer application
Whole caps suit retail packs, restaurant presentation and hot pot applications where the mushroom remains visible. Sliced and diced formats can reduce preparation work for soups, sauces, seasonings and prepared foods.
Sliced and diced options are subject to confirmation, including cut size, thickness and the acceptable amount of smaller pieces.
Build an approval record before ordering
Record the selected grade, cap diameter, stem requirement, broken tolerance, packing and intended use in the quotation or specification. Label the retained sample so it can be traced to the same product reference.
When a specification changes, review a new sample instead of assuming the earlier approval still represents the commercial product.
