Why formulas differ

Tteokbokki-style sticks can be produced with rice flour, wheat flour, potato starch, corn starch or blends depending on product design and process.

These options differ in chewiness, softness, cooking stability, cost and legal product description.

Read the ingredient statement carefully

A supplied reference lists potato starch, water, salt and food additive while using a rice-cake category name. Buyers should not insert rice flour or 100% rice into the specification unless the formula proves it.

Request ingredient percentages and the legal name, function and usage level of each additive.

Connect formula to performance

Test cooking time, swelling, sticking, breakage, sauce absorption and texture immediately and after holding.

Record results with the formula version, stick dimensions and approved sample because appearance alone cannot identify composition.

Control allergens and claims

Confirm allergens and facility cross-contact for the selected recipe. Potato starch alone does not justify a gluten-free or allergen-free claim when the full formula and site controls are unknown.

Keep purity, age-group and health claims off the label unless they are relevant, accurate and supported for the destination market.
